Selling Organic in a Down Economy

I would be interested to know if anyone has any opinions about the impact the economy may be having on sales of organic foods and other products.

 Could it be said that quality counts more, or less, when people start pinching pennies?

I've been seeing stories with varying points of view regarding how the slowing economy will impact organics. Some stories have said that people may cut back on organics to pinch pennies, but other stories have said that people are eating at home more than restaurants now and may justify the extra expense of organics by the fact that they're economizing by not going out to eat. Also, although organics' popularity has been filtering down to lower socioeconomic groups, wealthier shoppers will likely continue to buy organics as they are less hurt by the current economy. Few stories have shown that organics will absolutely be hurt, but it's a valid concern and a story that bears further watching.
